Hoja Blanca is a platform where I have the liberty to express ideas and show techniques I have learned working side by side various chefs without restrictions. One of the many reasons why I started with tasting menus for our pop-ups series is because I’ve always enjoyed small portions, this way we are inclined to try various dishes without the obligation of choosing one main entree.
